Kamut Dinner Rolls

I have just recently discovered the most delicious yeast dinner roll recipe using an ancient grain called Kamut.  Kamut is a high-protein variety of wheat and with kernels that are two-to-three times larger than most wheat and provides a higher nutritional value. Kamut has about 20-40% higher protein than other wheat varieties along with higher levels of vitamin E, lipids and minerals.  It has a lighter, slightly sweet and buttery taste to it compared to the hard red and hard white wheat.  It also has a lower gluten content, so can be tolerated by some individuals with a wheat sensitivity.  I may have just discovered another new staple for my household.  I'm already envisioning all of the fabulous variations I can do with these rolls from hot ham and cheese rolls, to topping them with garlic & butter, sesame seeds, poppy seeds, etc.  They also can vary in size and shaped into a dinner size roll or larger for a hamburger bun.  You can also shape them into small, 1.5 inch balls and place 3 together in a regular size muffin tin for a clover leaf shaped roll.  The options are endless....

Now for the recipe......this is so easy if you are already making bread.  Simply make the same exact recipe for your bread placing all ingredients in the pan in the same order with one exception.  For your flour, mill 4 1/2 cups of all Kamut flour. 

Next, instead of doing your normal homemade setting to make a loaf of bread, you want to select the "Quick Dough" cycle that will run for 45 minutes.

When the cycle is complete, take the dough out and shape into round balls and place on a cookie sheet.  (Your could also place close together in a greased round or square pan so that they touch as they rise and pull-apart like sister shubert rolls).  Once the rolls are all made, allow to rise for about 15 minutes (or until they double in size) before baking. 

Bake at 400 degrees for 10 minutes for dinner size rolls and 12 minutes for hamburger buns.

That's it -- they are amazing!!
