My favorite cookie recipe using my fresh flour is "Chocolate Chip Oatmeal Flax Cookies". There are so many variations to this cookie recipe depending on your taste....like using three types of chocolate chips for a "triple chocolate chip flavor"....(try white chocolate chips, semi-sweet chocolate chips and milk chocolate chips). You can also always add toasted nuts......you could use craisins and white chocolate chips.......the options are endless! And, I think the oatmeal in these cookies makes it so delish and chewy!
Recipe for Chocolate Chip Oatmeal Flax Cookies:

1 cup butter
2 cups Sucanat
2 eggs
1 tsp. vanilla
2 1/2 cups freshly milled soft white wheat flour
1 cup oatmeal
1/2 cup ground flax seed
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups chocolate chips
Cream butter and Sucanat making a grainy paste. Add eggs and vanilla and beat well. Mix dry ingredients and stir into creamed mixture. Add chocolate chips. Make into 1" balls (or scoop with a cookie scoop) and place on ungreased cookie sheet 2" apart. Bake at 350 degrees for 10 minutes. Makes about 5 dozen cookies. *Note, if you wish to omit oatmeal, use 3 1/2 cups soft white wheat flour. Try making a cookie cake by pressing dough into a pizza pan! Fun for kids birthdays!
These cookies are so tasty and uniform looking when they come out that I often "gift" them by stacking 6-8 cookies on top of each other in a medium sized clear cellophane bag and securing with a bow --- makes a nice hostess gift, thank you gift, just because gift for a teacher, etc.
